Banna Boats

We made this for desert tonight, using bananas that were overripe (the kind of overripe that's a day away from banana bread), some pantry staples, and a tube of Grands biscuits that were $.50 after sale + coupon. My kids loved it!

Here's what you need:
  • 1 tube of Grands (or store brand) biscuits
  • Brown Sugar
  • Cinnamon
  • Butter (or margarine, whatever you use)
  • A few bananas 
  • Cooking spray 
  • Muffin Tin (I have one that makes 6 jumbo muffins)

Here's what you do:
  • Spray the muffin tin well with the cooking spray, preheat oven to 350.
  •  Put some butter in the bottom of each tin (about a teaspoon- whatever looks good to you)
  • Add about 2 teaspoons of brown sugar on top of the butter, and sprinkle with cinnamon
  • Slice bananas up evenly into the muffin tins
  • Place a biscuit into each tin (you may have to cut them in half if using a regular-sized cupcake pan), or more accurately: stuff the biscuit down in there. Sprinkle some cinnamon and sugar (I used white sugar) on top of the biscuit.
  • Pop them in the oven for 11-14 minutes (depending on your oven), making sure the underside of the biscuits are cooked through
  • Remove from oven and let cool a few minutes in the pan. 
  • No need to invert the pan- if they are cooked all the way through, the bananas at the bottom will come out when you (gently) remove the biscuit from the tin. Serve banana side up.
