Here's what you need:
- 1 tube of Grands (or store brand) biscuits
- Brown Sugar
- Cinnamon
- Butter (or margarine, whatever you use)
- A few bananas
- Cooking spray
- Muffin Tin (I have one that makes 6 jumbo muffins)
Here's what you do:
- Spray the muffin tin well with the cooking spray, preheat oven to 350.
- Put some butter in the bottom of each tin (about a teaspoon- whatever looks good to you)
- Add about 2 teaspoons of brown sugar on top of the butter, and sprinkle with cinnamon
- Slice bananas up evenly into the muffin tins
- Place a biscuit into each tin (you may have to cut them in half if using a regular-sized cupcake pan), or more accurately: stuff the biscuit down in there. Sprinkle some cinnamon and sugar (I used white sugar) on top of the biscuit.
- Pop them in the oven for 11-14 minutes (depending on your oven), making sure the underside of the biscuits are cooked through
- Remove from oven and let cool a few minutes in the pan.
- No need to invert the pan- if they are cooked all the way through, the bananas at the bottom will come out when you (gently) remove the biscuit from the tin. Serve banana side up.
